The influencer, who boasts 217,000 followers on Facebook and another 27,000 on TikTok, sustained wounds to her left shoulder, neck and hand.
Once the ordeal was over, he drove her to the Las Vegas Clinic in Medellin to receive medical attention.
However, she died before undergoing surgery.
The authorities arrived shortly afterwards to question him about what happened.
They have since confirmed that the deceased influencer was stabbed four times while her companion was treated for only minor injuries.
To assist in their investigation, the police took victim’s mobile phone, as well as her former partner’s two devices.
He used one as a personal phone and the other for his job as a taxi driver.
They also examined his vehicle – a white Mazda 2 – finding bloodstains on the passenger seat and roof.
The police investigated CCTV footage from the surrounding area to corroborate what the man told them, or to see if there were any other motives involved.
Security cameras show the couple driving south at 8.59pm toward La Tablaza and then later entering Medellin just before 10pm.
In a turn of events, the family of the victim have disputed his version of events.
Speaking to the Colombian media, her father questioned why nothing was taken during the robbery.
He also questioned why her ex-boyfriend chose to drive to Medellin – approximately six hours away by car – when there was a hospital much closer in the south of the Aburra Valley.
A friend of Restrepo Valencia also claims that he spoke to the influencer just moments before she was allegedly robbed.
He said that he could hear Restrepo Valencia either choking or crying.
He also claims that he also heard the voice of a man shouting in the background.
Her family have also revealed that after Restrepo Valencia had no intention of getting back together with her ex-boyfriend after they broke up.
Despite this, the man readily identified himself to authorities and told how they had been in contact again after ending a four-year relationship.
Best known for her humorous content, pranks, and online challenges, Restrepo Valencia’s death is the 93rd reported murder in the region of Antioquia this year.
This represents an increase from last year when only 83 people had been victim of homicide.
